As a dieter, a Vegan or even as a vegetarian you might be missing some of the things you use to love dining on. For me, one of those things was Corned Beef. Here is a great recipe to make your own Vegan Corned Beef Strips. With this one I love the fact that we get away from unhealthy fats, we get wonderful protein, fabulous flavor and none of the guilt. In short, you are going to love this recipe!
Ingredients:
1 package Butler Soy Curls
4 cups vegetarian beef style broth
3 tblsp Beet Root Powder
1 cup apple cider or white vinegar
1 T pickling spice or 5 whole cloves + 1 cinnamon stick + 1/2 tsp dill + 1 clove minced garlic + 1/2 tsp peppercorn + 3/4 tsp mustard seed
1/2 tsp sea salt
2 T olive oil
Directions:
Heat vegetarian beef style broth, beet root powder, vinegar, pickling spices, and salt to a boil. Remove from heat. Add soy curls, cover, and allow to soak for an hour (more is fine). The soaking give is the taste but also the color of Corned Beef.
When ready to cook, drain remaining liquid well. Soy curls will now be nice and bright. Put olive oil in the bottom of a large pan and sauté until curls begin to slightly brown. This increases the meat like texture and adds to the Corned Beef flavor of the newly formed vegan Corned Beef
